Title: Bren's File Gumbo (c1985)
Description: Modified from original Louisiana File Gumbo
1 bag cut okra
1 cup chopped celery
1 lg chopped onion
4 or 5 cloves garlic (sliced or chopped)
1 lg can stewed tomatos
chicken parts (mostly wings)
Louisiana mild links
salt, pepper, bay leaves (3 or 4)
season chicken and flour (fry lightly) set aside.
lg pot of water add bay leaf and bring to boil.
Saute okra, onions, garlic & celery (do not stir okra too much) when lightly cooked add to boiling water along with sausage and stewed tomatoes. Boil 45 minutes add lightly cooked chicken boil until chicken is almost done about 20 minutes. Add seafood and 3T file` cook another 30 minutes. Serve over rice w/french bread or saltine crackers.
