HM, Thanks for the background. Have to say that I'm certainly surprised by the origins of scrapple. I sure thought it was as African American as, well, "chitlins". My ex was from DC and was a scapple-maniac. When we lived in NYC he could never find "good scrapple" so one of the first things he had to have when he went home was scrapple. I must say that I never quite understood his appreciation. But then he also craved brains and eggs for breakfast. B.J.
