As a child living in Louisiana I remember eating cushaw - which reminded me of candied sweet potatoes - served as a side dish along with rice and gumbo.

It was delicious - but have never found it anywhere else.

I have found one recipe online - but was wondering if anyone has ever eaten it - or has other recipes for it.
