at the more adventurous food stalls .

There's an abundance of eggplant this year
- You can curry or make a choka.. & one of my favorite uses/ recipes - eggplant fritters can be made sweet (with sugar & nutmeg like a french toast or beignets) or savory & served with a salsa. Soak sliced eggplants in salted water first & dry, before dredging in batter & frying.

I make an egg-less version by using chickpea flour as a base (ground chick pea flour can be found at your local health food stores) _ t.b.
