I do recall that in the narratives that I analyzed for MS and Ark., most of the men who took a different surname actually took the surname of their father...or the surname their father decided to take.
I did a tally in my own family tree, where the last enslavers' names have been identified, a little less than half took the last enslaver's surname. Of the ones that didn't, a majority of them went back in the surname of a previous enslaver...whose farm or plantation is where they were born.
