I have an Epson Perfection 2480 Photo scanner and I have scanned documents (birth certificates, passports, etc.) in JPEG to preserve them in case of an emergency. I think you are way ahead of me as far as scanning and using documents though. I haven't scanned anything as a PDF. I'm looking forward to seeing what other people do.
