I thought the same thing also. Since I posted the query, I have chased Doc all over the place. There was a Dock Sr who died in 1923 and a Dock Jr who died in 1972. They are family.
Louisa's grgrgranddaughter contacted me via Ancestry and Louisa was confirmed there. In Madison, Tn on the death certificate for daughter Daisy, Dock is the informant and gave Louisa as the mother. Malinda/Molinda Burnett, Georgie and Susan's marriage license with Dock Adams are records I myself found at the court House in Ms. many years ago. I am puzzled myself, but on subsequent census I have found names of children from marriages up until 1910 in a Dock Adams household from Louisa and Malinda.
I thank you for your interest and believe me it is confusing. But I am beginning to think my Dock(and family says the Adams did have a lot of women) may have married women to help them keep their farms. Even my grgrandfather had children by other women during his marriage to the first marriage. In fact he outlived all of his women(age 97). The ages of the children and where the census says the length of marriage just does not add up. Georgie was a 1 year on the census taken. Dock Adams Sr. was in Lee, Central Grove Ms. and Madison Tn--confirmed.
Louisa's ggranddaughter said family in Ms. told her some of the Adams married each other and often. The research is ongoing. There are still Adams decendants living in the small towns to this day. I don't know who, but hopefully will find out.
I found a Susan Adams, widowed no children still living in Ms. on a 1920 census. I am assuming she is Susan Ann Hunt, for the same reason you have found. She shows up no where but this census and marriage record.
