Baptist churches are independent and may or may not belong to an association. Their choice. I've had no luck with getting records from the one where I grew up which was established in the 1880s. The current church clerk has no records before the 1950s and they probably got tossed on the junk heap when the prior clerk died. Nobody got them from her when she was no longer clerk and they were still at her house. Heaven only knows where the ones went that pre-dated her. And our church DID belong to an association.

The (Arkansas) State Archives has a few records from some association meetings that were given to them by individuals, not by a church body.

Check with any nearby college that may have collected records. In "my" county, there is Baptist-affiliated University which has records for the white Baptist association. I've not gone through them but that's still a possibility.
