This is the dish I am requested to make at every family gathering.
It is quick, easy and inexpensive. I never have any leftovers. I call it "Mexican casserole". Hope you all enjoy it.
1 and 1/2 pounds of ground beef
2 10.5 oz. can of cream of mushroom soup
1 16 oz. jar of salsa, hot, mild or medium depending on your family taste. (I use Walmart's great value brand)
1 pound velvetta cheese
2 packages of velvetta shells and cheese
preheat oven to 350 degrees
Cook shells and cheese according to package direction.
Brown ground beef, drain.
Mix prepared shells, velvetta cheese, ground beef, salsa and cream of mushroom soup in large casserole dish. Bake fo 45 minutes in 350 degree oven.
If you prefer less cheese you can omit the pound of velvetta cheese.
My cousin wants me to make this every time he comes to town. It is reguested more than any dish I make, excluding the chicken spaghetti dish my younger sister want me to make every other day.
enjoy,
Ann
