What a fun trip! It's not hard to plan a daytrip at all. The first thing I'd do is check with the San Antonio Visitors & Convention Bureau or Chamber of Commerce, or whomever can give you a comprehensive list of things to do on the date you're there. I'm sure they have a website; visit it to get an idea of the events that will be taking place during your trip.
Secondly, plan your day like you ordinarily would. That morning when you arrive, plan time for breakfast from say 8 to 8:30 a.m. (or whatever time you'd like), then if you want to go to the theme park, you can plan to spend 2 to 3 hours there, followed by lunch, then a couple of hours at the zoo, maybe some free time for folks to get some shopping in, the museum trip, then dinner and perhaps a show, followed by a firm time for your family to be back at the bus for the return trip home. That's the kind of planning you'd do, depending on the events your group chooses to attend.
Finally, don't wait until you get there to plan your day. And don't forget to run the itinerary by your passengers beforehand to make them part of the planning process. They will want to have some say in what they do and where they go. And don't hesitate to be firm in keeping to your schedule. You can't let a few stragglers throw you off, but be flexible in case something good crops up that the group doesn't want to miss.
