You know that is ALWAYS the major problem. Those people in the family who can send the correct amount for their entire family group will not do so until they either walk in the door and first look at the food being served or will just play crazy and not pay. I just don't understand this. I had a family member inviting friends and strangers to our picnic and had not paid a dime. When we asked for his money..do you know what he said. Y'all know I can't pay nothing until such and such a date sometime in the future. So there are families that will work together for the common gold and then there are the 'dead weights'. The only fair solution I came up with was to pick an all you can eat restaruant, tell folks where and when, and then it was up to them. No headaches, no money coming out of individual coordinators pockets. And kids ate what they wanted and liked...hamburgers, fries, ice cream, cake, soda's.
