(Carmen) Very finely chopped onions appear in old southern recipes.
Today, recipes may call for onion and/or garlic powder/salt.
It enhances the flavor of the cheese.
The bell pepper, celery and other stuff is definitely a caribbean thing!
Will try the recipe!
