I've always added bread crumbs or crackers. I once even used crushed potato chips since that was what I had on hand. I prefer salmon, but will use mackrel. I bake in the oven instead of frying using a bit of olive oil drizzled over each patty.

My mom recently used tuna , they tasted very light.
