It sure brought back memories for me. Every year my dad would have the same neighbor to kill the hog(by shooting him between the eyes), I read somewhere that this was a tradition. We , as children, would take the kidneys, put them on a wire hanger and roast them over the fire.
That bacon and sausage was the best. We would take the bacon dripping and pour it over our rice, delicious. I know we know better that to do that today, but we are talking about ancestral cooking.
Mom would always cook a large skillet of liver, while the men was at work cleaning and cutting the hog. Every body joined in to help at Hog Killing Time.
