The focus was specifically on having something that was "pork" because it is considered a good luck food.
My Mom generally made chitt'lins, spaghetti, greens, black-eyed peas, and cornbread.
The spaghetti "noodle" was symbolic of long life and originated from the Asian culture based on my research.
Nevertheless, it was very good!
Most good luck foods from the south involved foods that moved forward.
Chicken and lobster were no-no's!
