Many years ago, I was surfing the net and went on to Amazon.com to see what books they had on clearance. Usually I could really find some good buys, mainly because what I was looking for was afrocentric. I like books a lot better than internet. Not many people want anything like that. Well this one book caught my eye, because I was really getting into my African Root stage.

There was one recipe I tried BLACK EYED PEA Salad. Requires no cooking. That was good for me because you can decide to start something and then find out most of the stuff you have to go out and buy. Never used some it again. Well I can tell you using Frito's was what made me do it.

2 (8oz) cans of blackeyed peas dreained
1 (16 oz) can of Ro-Tel diced tomatoes and green chile or 1 c diced tomatoes and 1/4 c canned diced green chile
3 stalks green onions(scallions), sliced
1/2 c sliced black olives
1c bottled Italian dressing
4 oz feta cheese, crumbled (about 1 c)
Frito brand corn chips

combine the black eyed peas, tomatoes and green chile, green onions and black olives in a mixing bowl. Pour in the dressing and toss to mix well. Refrigerate at least 5 hours or overnight. Before serving, stir in the feta cheese and corn chips. Serve immediately.

SERVES 4

The other recipe NOT in the book is Dump Cake. No Cooking but excellant. I love it when people refuse to eat it, because you do so as a surprise, with ice cream of your choice.

Names of recipes turn folks off. There are many other down home recipes both African and USA that is palatable, ex. Buttermilk Bisquits, Kidney Beans in ham hocks.
