A holiday tradition for our family. The first Thanksgiving after our Mom passed we had abt 8 pans of eggplant, everyone was thinking the same way.
Cut up onion, shell and devain shrimp.
In large frying pan melt 2T butter, saute onions and shrimp until shrimp is done, add eggplant, chopping and frying until all is mixed well.
Add 1 egg beaten into frying pan stir, remove from fire.
Stir in cayenne pepper (taste, remember it's fire after a minute or two). When right amount of cayenne is in, add bread crumbs until mixture becomes a little thick (not too much).
Spread out in shallow buttered pan about 1/4 inch thick, top with additional bread crumbs.
Bake for l5 minutes at 350
