Hi. I've read this thread and hoping someone could answer a question for me. Why does fresh or fresh frozen speckled butter beans turn grey after cooking? I remember my Grandma cooking these and thier color would hold up. Maybe I'm thinking of some other type of butter bean? They are still good to eat but it's sad that they loose that pretty color. Thanks in advance!
