Thanks so much for that wonderful link. Juneteenth is indeed a day with a rich history worth celebrating. Celebrating calls for special foods, and that dish sounds succulent. I may just give it a try. Of course, anything that calls for a sweet potato is okay by me!

I have, however, been searching for years for a homemade "Sweet Potato Cake" Recipe. A good family friend from Louisiana (who has since passed on) made a wonderful one. The cake was rich and moist, and required no icing. Instead, you only sprinkled powdered sugar on it. I hope that one of our many resourceful Afrigeneans has a time-tested recipe that they can share.
