Something else my mother used to make when we were kids was salmon croquettes using canned salmon. She put onion and seasonings in it, patted in flour and fried. Again, like the fruit pies, they seemed to be a food item of our past. I was under the mistaken assumption that one of the reasons we ate so much of it was because it was economical. Not so. Mom said, even then, salmon was expensive. But she had it as a kid. Amazing, country folks in Arkansas, people that lived off the land, was eating good. :-)
