Now, this is NOT going to be very healthy, but here goes. It was the way my grandmother used to bake her chicken:

Remove "innerds" from whole chicken or hen and set aside.
Wash chicken thoroughly inside and out.
Season with salt and pepper inside and out. One small onion or four scallions, half a green and/or red bell pepper chopped, may be added IF desired.
Place in covered baking dish or roasting pan with 2/3 cup water.
Bake at 350 for 20 minutes, basting every 10 minutes.
Pour a WHOLE CUBE OF MELTED BUTTER OR MARGARINE over and in chicken.
Pour 2/3 cup of white distilled vinegar over and in chicken.
Baste every 10 minutes until desired doneness. Preferably until meat falls off the bones!

My favorite side dishes with this are mashed potatoes and sweet peas or string beans. Cornbread dressing and macaroni and cheese, too.

I know we all know how to "put our foot in it" so the seasoning is to taste and the cooking times are approximate.
