This forum is great. This is my first post on this one. Hope to post many more. I will share something that my granny confirmed this summer. If you are going to serve racoon, you must have candied yams in the baking dish with it. Don't ask me why but when I asked other people from the same area (WV) that we are from, they all said the same thing.
Regional food is very interesting. My maternal line spent time in WV after leaving VA. The food that we eat is based on what one could find in "them thar hills" LOL. I will contact my granny (who is 94 but still has good days) and ask her about the stuff that she used to cook.
One thing for sure, I have NO INTENTION of eating squirrel in this lifetime. LOL
