I encountered a similar situation while researching my mom's Perkins line in Louisiana. Her ancestor is listed in 1870 with a wife and children, some of whom have a different surname. I suspected they might have been step-children. This was confirmed in 1880. A couple of them listed with surname Perkins in 1870 even had the surname of their own father by 1880. I've encounterd the same thing a couple more times for two other ancestors. Seems that when the children or the marriage was young, it may have been more common for a new husband to claim parentage for all of the children. A child usually opted to claim their true surname by the next census.
